1: You cant install lastest AMD chipset drivers, you can install these drivers from your motherboard webpage (3 years old or something drivers)
2: Microphone doesnt work (Realtek 3.5mm plug) i have no idea how to fix it, i installed 2 different realtek drivers

Fix for 2:

• To let apps access the microphone, select Start ,then select Settings > Privacy > Microphone . Select Change, then turn on Allow apps to access your microphone.

For some reason though, my brightness display doesn't seem to change. I've updated the display driver and all others but can't seem to fix this. Any help?

The laptop is too bright and affects the viewing experience.

Can you adjust it from your laptop or throw settings?
Is your VGA working?

I'm not sure what you mean by throw settings (not very techie). However, I tried adjusting the brightness using the laptop keys but it didn't work. Can't seem to find the brightness settings in the display settings as well. I'm not sure about my VGA.

I use a HP Elitebook 830 G5, which doesn't seem to have a VGA port.

You won't find a VGA port at your laptop its already indegrated.
Check in the lower left hand part of the keyboard for an fn key. Press and hold that and see if you can get the brightness to work.
Or try one of the below solutions to see if you can solve your issue.

The brightness still doesn't adjust, and the brightness slider is missing from the display settings. I think I'll have to reinstall the OS again to get it working. Will burn with Ventoy instead of Rufus.

I tried opening programs like msi center and nvidia control panel. And it says service cannot be started.
