Locked Win defender

Hello Guys
I'm a serial reformater and try something new and you guys help me out with this no end, usually I sort any problem myself. I find now and again no matter what I do win defender beats me in one way or another . One app will install without difficulty and then another ill get the permissions etc pop and no joy...
What do you guys find best to nullify defender, or is there an easy way to leave defender alone and exclude whatever I want to install.

I'm more interested in Graphics and photography, so these are the type of progs I use I'm on a Z600 with 48 gig of ram noN-compliant for win 11, so use win 10pro most of the time I have difficulty booting from USB so I'm limited to DVD or dual layer

As @TheMacGyver said, Defender Control works flawlessly for me. I use Panda & Malwarebytes in place of it, and so far, great results.
