Trying to avoid "yet another what OS should I use" thread - but what OS should I use?

Seriously tho - I've been a fan of "custom" Windows releases for a long time - since the early days of LastXP (which I still miss sorely). But it's been a LONG time since I've played in this area (dealing mostly with leenoox in my day job).

I've DL'd a couple of the more popular / active builds here - but the reason for the ask is to understand if there's something else out there that isn't obvious - like a stripped PE environment that's more suited to my needs.
I know that modded OSes are generally done with an eye on supporting a bevy of apps - but I really just need a STABLE core that supports USB and (wired) networking and I'm golden. I can use anything from Win7 through Win10. I'm leaning towards Win7 since the machine is older - and I sort of hate Windows more and more as it """matures""" and MS tries to make it smarter (and rather fails IMO). But again, stability is more important than my feelings Since it's a "standard" PC the size of the install isn't a factor, but I don't need anything but the core OS if possible.
So if anyone has suggestions I'd love to hear them.

that I plan to use as a CNC controller - it will run a single app (MACH3) and possibly a CAD/CAM package of some sort (Rhinoceros or Vectric Aspire) but will most likely lack the power required for that.
