Run the cmd and execute: Dism.exe /online /Export-DefaultAppAssociations:C:\Temp\DefaultApps.xml
Open the .xml file and edit lines related to pdf files (for example see code below):

... to be honest, I am not sure if these will work because changing file associations, the same as inserting entries in the mouse context menu, is one of the downfalls for the portable apps. Not always it depends on producers too...
Mirkec, thank you for the above. It appears that Adobe Acrobat relies on MS paint to render the Thumbnail instead of the usual PDF icon. When using a lite or ultra lite OS MS Paint is usually removed from the OS in an effort to make it lighter. Perhaps OS builders must get a message not to remove MS Paint from their builds. It also appears Adobe is not doing anything to remedy the issue.
