when you install create a local account cause no one really needs to be signed into a microsoft account all the time. the little bit of extras you get with a microsoft account versus a local account doesn't justify giving microsoft more access to you computer. as for windows update no do not disable, cause everyone should be keeping their system as up to date as possible. now with that said i would recommend that you disable allow windows to update your drivers. i strongly recommend you either manually update your drivers or use driver genius, driver navigator both of which can be found on here.
